Grilled Peach Crumble for Two

It would not be me if I did not leave a dessert recipe for peaches. This recipe is for one of those intimate nights. Whether it is a night with your loved one, a close friend or family, this one does not disappoint.

What you need:

2 ripened peaches, peeled and cut into ½ inch chunks (if you have an electric grill or using a grill pan) or in halves (if you are using a regular charcoal or gas grill)

1/8 cup light brown sugar

½ teaspoon of ground ginger

1 tablespoon of lemon juice

¾ teaspoon of arrowroot powder

The Topping:

¼ cup all-purpose flour

¼ cup old fashioned rolled oats

1/8 cup light brown sugar

¼ cup sliced raw almonds

½ teaspoon ground cinnamon

1/8 teaspoon salt

4 tablespoons of cold unsalted butter cut into small cubes

1- Heat up the grill. Once the grill is hot, place the peaches on top. Let the peaches grill until grill marks are made on the 2013-07-24 16.27.32peaches.

2- Remove the peaches from grill and put them in a bowl.

*If you were grilling the peaches on a charcoal or gas grill, continue to cut them into ½ inch chunks.

3- Add the light brown sugar, ginger, lemon juice and arrowroot powder. You will notice that the arrowroot powder naturally thickens the liquid from the mixture. Split the filling equally in two large ramekins.

4- Preheat the oven to 350 degrees Fahrenheit. Add the flour, oats, almonds, light brown sugar, cinnamon and salt in a food processor. Pulse the mixture until it looks uniform.

5- Add the cold unsalted butter chunks to the food processor and pulse until well combined.

6- Take the crumble mixture and spread the topping on the peach filling.

7- Place the ramekins on a pan and bake for 45 minutes until it is bubbly and the topping is golden brown.

8- Remove the ramekins form the pan and place them on small plates. Serve the dish as is or a la mode.

    • Thanks! Yes. All-purpose flour is the same as the plain flour you can find at any grocery market. You can also substitute the all-purpose flour with whole wheat flour. If you plan to use whole wheat flour instead of all-purpose flour, then the baking time is reduced to about 20 minutes.
