Apple Cider Vinaigrette

Here is a recipe for vinaigrette that is perfect for the season. A popular drink during the fall is apple cider. I thought that my apple cider vinaigrette would be perfect to add a bit of autumn to your salad.

What you need:

2 apples (Preferably a variety with a sweet and tart flavor. In this recipe I use Calville Blanc apples, but gala apples will work too).

1 cup Trader Joe’s Spiced Apple Cider

3/4 cup cider vinegar

2 tablespoons honey

¼ teaspoon salt

¼ teaspoon fresh cracked black pepper

½ teaspoon dry mustard

¼ cup grape seed oil

1- Remove the skin and dice the apple into chunks. Place the apples into a blender with the apple cider.

2- Blend the apples and cider until homogenous.

3- Place the mixture into a sauce pan and gently warm it at medium heat.

4- Whisk in the salt, pepper, mustard and honey. After the spices are mixed in, add the cider vinegar.

5- Remove the mixture from the heat and cool to room temperature. Remove foam with a spoon if there is any present.

6- Whisk in the grape seed oil. Then place the vinaigrette into a carafe, cover with plastic wrap and store inside the refrigerator until use.

It is best to use the apple cider vinaigrette within one week. Shake or swirl the vinaigrette before each use.
